Ingredients:
- 1 cup mixed vegetables (carrot, beans, peas, potato, cauliflower), chopped
- 1 large onion, finely chopped
- 1 large tomato, chopped
- 1/2 tsp Paach Masala
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala (optional)
- Salt to taste
- Fresh coriander leaves, chopped (for garnish)
- 2 tbsp oil
Instructions:
Heat Oil: In a large pan, heat oil over medium heat. Add chopped onions and sauté until golden brown.
Add Tomatoes and Spices: Add chopped tomatoes, Paach Masala, turmeric powder, red chili powder, and salt. Cook until tomatoes are soft and the oil starts separating from the mixture.
Add Vegetables: Add the mixed vegetables and stir well, making sure they are coated with the spice mixture.
Cook the Vegetables: Cover the pan and cook on low heat for about 10-12 minutes, stirring occasionally, until the vegetables are tender. You can add a splash of water if needed to prevent sticking.
Add Garam Masala: Once the vegetables are cooked, sprinkle a little garam masala for extra flavor if desired, and mix well.
Garnish and Serve: Garnish with fresh coriander leaves and serve hot with roti, paratha, or rice.
