
Ingredients:
- 500g mutton, cut into pieces
- 2 large onions, finely sliced
- 2 tomatoes, chopped
- 1 tbsp ginger-garlic paste
- 1/2 cup yogurt
- 1 tsp garam masala
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- Salt to taste
- Fresh coriander leaves, chopped (for garnish)
- 4 tbsp oil
- 2 cups water
Instructions:
Marinate the Mutton: In a large bowl, marinate the mutton pieces with yogurt, turmeric powder, red chili powder, and salt. Set aside for at least 30 minutes to tenderize.
Heat Oil and Sauté Onions: In a large pot, heat oil over medium heat. Add the sliced onions and sauté until they turn golden brown.
Add Ginger-Garlic Paste: Add the ginger-garlic paste and cook for a minute until the raw smell disappears.
Add Tomatoes and Spices: Add the chopped tomatoes, coriander powder, and salt. Cook until the tomatoes soften and blend well with the onions.
Add Mutton and Cook: Add the marinated mutton pieces and mix well. Cover and cook on medium heat for about 10-15 minutes, stirring occasionally until the mutton is browned and releases its juices.
Add Water and Garam Masala: Add water and garam masala, and stir well. Cover and cook on low heat for 45 minutes to 1 hour, until the mutton is tender and the curry has thickened to your desired consistency.
Garnish and Serve: Garnish with fresh coriander leaves. Serve hot with rice, naan, or roti.
