Malvani, Khandeshi and Gavran Masala: What Makes Each Different?

Maharashtra does not have one masala; it has many. The flavour changes from the Konkan coast to the villages of the Deccan and the Khandesh region in the north. Here is a simple guide to three styles our customers ask about most: Malvani, Khandeshi (Khandke) and Gavran.

Malvani masala

Malvani cooking comes from the Malvan coast of Konkan. Our Malvani Chicken Masala is inspired by Malvan's traditional recipes and is prepared with roasted coconut paste and spices, which gives a rich aroma and a homely taste. It suits chicken and mutton gravies. For seafood, our Malvani Fish Masala is a tangy, spicy coastal blend for fish curry, fish fry and prawns.

Khandeshi (Khandke) masala

Khandke masala is the traditional taste of Maharashtrian mutton dishes, with bold roasted spices and a good amount of heat. Our Khandke Mutton Masala is ground in small batches and works well in mutton curry, fry masalas and kheema.

Gavran masala

Gavran means country or village style. Gavran masala is rustic and earthy, inspired by rural kitchens. Our Gavran Rassa Masala is made from whole spices that are roasted and ground, and it suits chicken, mutton and vegetable rassa.
